- Almond flour - 100 grams
- Powdered sugar - 50 grams
- Unsalted butter - 50 grams, softened
- Egg yolk - 1 large
- Vanilla extract - 1 teaspoon
- Dark chocolate (70% cocoa) - 50 grams
Steps
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the almond flour and powdered sugar.
- Add the softened butter, egg yolk, and vanilla extract to the dry ingredients, and mix until a dough forms.
- Using your hands, form small balls (about 15 grams each) and place them on the prepared baking sheet, spaced apart.
- Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden. Allow them to cool completely.
- While the cookies are cooling, melt the dark chocolate in a microwave or a double boiler until smooth.
- Once the cookies are cool, sandwich two cookies together with a small amount of melted chocolate in between each pair.
- Drizzle any remaining chocolate over the top of the assembled cookies, and let them set at room temperature or in the fridge.
