Ingredients

  • Almond flour - 100 grams
  • Powdered sugar - 50 grams
  • Unsalted butter - 50 grams, softened
  • Egg yolk - 1 large
  • Vanilla extract - 1 teaspoon
  • Dark chocolate (70% cocoa) - 50 grams

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the almond flour and powdered sugar.
  3. Add the softened butter, egg yolk, and vanilla extract to the dry ingredients, and mix until a dough forms.
  4. Using your hands, form small balls (about 15 grams each) and place them on the prepared baking sheet, spaced apart.
  5. Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden. Allow them to cool completely.
  6. While the cookies are cooling, melt the dark chocolate in a microwave or a double boiler until smooth.
  7. Once the cookies are cool, sandwich two cookies together with a small amount of melted chocolate in between each pair.
  8. Drizzle any remaining chocolate over the top of the assembled cookies, and let them set at room temperature or in the fridge.
