Baccalà Mantecato
Baccalà Mantecato is a creamy, whipped salt cod spread that is a traditional Venetian delicacy. This high-protein dish is perfect for a light lunch, served on crusty bread or polenta.

Ingredients
- Salt cod - 200 grams
- Water - 500 ml
- Extra virgin olive oil - 50 ml
- Garlic - 1 clove
- Lemon juice - 15 ml
- Fresh parsley - 2 tablespoons, chopped
- Black pepper - to taste
- Crusty bread - 4 slices (for serving)
Steps
- Soak the salt cod in cold water for 24 hours, changing the water several times to remove excess salt.
- After soaking, drain the cod and place it in a pot with 500 ml of fresh water. Bring to a boil, then reduce the heat and simmer for 15-20 minutes until the fish is cooked through.
- Remove the cod from the pot and let it cool slightly. Once cool, remove any skin and bones, and flake the fish into a bowl.
- In a food processor, combine the flaked cod, garlic, lemon juice, and half of the olive oil. Blend until smooth and creamy.
- With the processor running, slowly drizzle in the remaining olive oil until fully incorporated. Season with black pepper and mix in the chopped parsley.
- Serve the Baccalà Mantecato on slices of crusty bread, garnished with additional parsley if desired.
