Ingredients

  • Salt cod - 200 grams, soaked
  • Olive oil - 3 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, finely chopped
  • Cherry tomatoes - 400 grams, halved
  • Black olives - 100 grams, pitted and chopped
  • Capers - 1 tablespoon, rinsed
  • Fresh parsley - 2 tablespoons, chopped
  • Red pepper flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Soak the salt cod in cold water for 24-48 hours, changing the water regularly to remove excess salt.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until soft and translucent.
  3. Add the halved cherry tomatoes to the skillet and cook for about 5 minutes until they start to break down.
  4. Stir in the chopped olives, capers, red pepper flakes, and season with salt and black pepper. Allow the mixture to simmer for another 5 minutes.
  5. Drain the soaked cod and pat it dry. Cut it into serving pieces and gently add it to the skillet with the tomato mixture.
  6. Cover the skillet and simmer for about 20 minutes, turning the cod occasionally to ensure it cooks evenly.
  7. Once the cod is cooked through and flakes easily with a fork, remove from heat and sprinkle with fresh parsley before serving.
