Ingredients

  • Baccalà (salted cod) - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon - 1, juiced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh oregano - 1 tablespoon, chopped
  • Black pepper - to taste
  • Salt - to taste
  • Cherry tomatoes - 150 grams, halved
  • Arugula - 50 grams, for serving

Steps

  1. Soak the baccalà in cold water for 24 to 48 hours, changing the water several times to remove excess salt.
  2. After soaking, drain and pat the baccalà dry with paper towels. Cut it into two pieces.
  3. In a small bowl, mix the olive oil, minced garlic, lemon juice, chopped parsley, chopped oregano, black pepper, and a pinch of salt.
  4. Preheat a grill or grill pan over medium heat. Brush the baccalà pieces with the herb mixture on both sides.
  5. Grill the baccalà for about 5-7 minutes on each side, or until the fish is cooked through and has nice grill marks.
  6. While the baccalà is grilling, toss the halved cherry tomatoes with a little olive oil, salt, and pepper in a bowl.
  7. Once the baccalà is done, serve it on a plate with the grilled tomatoes and a bed of arugula. Drizzle any remaining herb mixture over the top.
