- Dark rum - 50 ml
- Water - 100 ml
- Vanilla extract - 5 ml
- Powdered sugar - for dusting
Steps
- Preheat the oven to 180°C (350°F) and grease two small ramekins.
- In a mixing bowl, combine the flour, granulated sugar, baking powder, and salt.
- In another bowl, whisk together the eggs, melted butter, milk, dark rum, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Divide the batter evenly between the prepared ramekins.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- While the cakes are baking, prepare the rum syrup by combining water and dark rum in a saucepan and bringing it to a simmer.
- Once the cakes are done, let them cool for a few minutes before soaking them in the warm rum syrup for about 10 minutes.
- Remove the cakes from the ramekins and place on a serving plate, dust with powdered sugar before serving.
