Ingredients

  • Granulated sugar - 50 grams

  • Salt - 1 gram
  • Eggs - 2 large
  • Unsalted butter - 30 grams, melted
  • Milk - 50 ml
  • Dark rum - 50 ml
  • Water - 100 ml
  • Vanilla extract - 5 ml
  • Powdered sugar - for dusting

Steps

  1. Preheat the oven to 180°C (350°F) and grease two small ramekins.
  2. In a mixing bowl, combine the flour, granulated sugar, baking powder, and salt.
  3. In another bowl, whisk together the eggs, melted butter, milk, dark rum, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Divide the batter evenly between the prepared ramekins.
  6. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  7. While the cakes are baking, prepare the rum syrup by combining water and dark rum in a saucepan and bringing it to a simmer.
  8. Once the cakes are done, let them cool for a few minutes before soaking them in the warm rum syrup for about 10 minutes.
  9. Remove the cakes from the ramekins and place on a serving plate, dust with powdered sugar before serving.
