Ingredients

  • Veal roast - 500 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Fresh rosemary - 2 sprigs, chopped
  • Fresh thyme - 2 sprigs, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 250 ml
  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, sliced

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium-high heat. Season the veal roast with salt and black pepper, then sear it on all sides until browned (about 5 minutes).
  3. Add the minced garlic, rosemary, and thyme to the skillet, cooking for an additional minute until fragrant.
  4. Transfer the veal to a roasting pan and pour the vegetable broth around it. Cover the pan with aluminum foil.
  5. Roast in the preheated oven for 60 minutes, then remove the foil and add the sliced zucchini and bell pepper around the veal.
  6. Continue roasting uncovered for an additional 20-30 minutes, or until the internal temperature of the veal reaches 70°C (160°F).
  7. Remove the veal from the oven and let it rest for 10 minutes before slicing.
  8. Serve the sliced veal with the roasted vegetables on the side.
