- Veal roast - 500 grams
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Fresh rosemary - 2 sprigs, chopped
- Fresh thyme - 2 sprigs, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 250 ml
- Zucchini - 1 medium, sliced
- Bell pepper - 1 medium, sliced
Steps
- Preheat your oven to 180°C (350°F).
- In a large skillet, heat the olive oil over medium-high heat. Season the veal roast with salt and black pepper, then sear it on all sides until browned (about 5 minutes).
- Add the minced garlic, rosemary, and thyme to the skillet, cooking for an additional minute until fragrant.
- Transfer the veal to a roasting pan and pour the vegetable broth around it. Cover the pan with aluminum foil.
- Roast in the preheated oven for 60 minutes, then remove the foil and add the sliced zucchini and bell pepper around the veal.
- Continue roasting uncovered for an additional 20-30 minutes, or until the internal temperature of the veal reaches 70°C (160°F).
- Remove the veal from the oven and let it rest for 10 minutes before slicing.
- Serve the sliced veal with the roasted vegetables on the side.
