- Carrots - 2 medium, cut into chunks
- Zucchini - 1 medium, sliced
- Red onion - 1 medium, cut into wedges
- Chicken broth - 250 milliliters
Steps
- Preheat the oven to 180°C (350°F).
- In a small bowl, mix the olive oil, minced garlic, rosemary, thyme, salt, and black pepper to create a marinade.
- Rub the marinade all over the turkey breast, ensuring it is evenly coated.
- In a roasting pan, arrange the carrots, zucchini, and red onion at the bottom.
- Place the marinated turkey breast on top of the vegetables.
- Pour the chicken broth into the pan around the turkey, being careful not to wash off the marinade.
- Cover the roasting pan with aluminum foil and place it in the preheated oven.
