  • Thyme - 1 teaspoon, chopped

  • Black pepper - 1/2 teaspoon
  • Carrots - 2 medium, cut into chunks
  • Zucchini - 1 medium, sliced
  • Red onion - 1 medium, cut into wedges
  • Chicken broth - 250 milliliters

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a small bowl, mix the olive oil, minced garlic, rosemary, thyme, salt, and black pepper to create a marinade.
  3. Rub the marinade all over the turkey breast, ensuring it is evenly coated.
  4. In a roasting pan, arrange the carrots, zucchini, and red onion at the bottom.
  5. Place the marinated turkey breast on top of the vegetables.
  6. Pour the chicken broth into the pan around the turkey, being careful not to wash off the marinade.
  7. Cover the roasting pan with aluminum foil and place it in the preheated oven.
  8. Roast for 60 minutes, then remove the foil and roast for an additional 20-30 minutes, or until the turkey reaches an internal temperature of 75°C (165°F).
  9. Remove from the oven and let it rest for 10 minutes before slicing and serving with the roasted vegetables.
