- Beef roast (chuck or round) - 500 grams
- Olive oil - 2 tablespoons
- Garlic - 4 cloves, minced
- Fresh rosemary - 2 sprigs, chopped
- Fresh thyme - 2 sprigs, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Carrots - 2 medium, chopped
- Onion - 1 large, quartered
- Red wine - 100 milliliters
- Beef broth - 200 milliliters
Steps
- Preheat your oven to 160°C (320°F).
- In a large bowl, combine olive oil, minced garlic, rosemary, thyme, salt, and black pepper to create a marinade.
- Rub the marinade all over the beef roast and let it sit at room temperature for 30 minutes.
- In a large oven-safe pot, add the chopped carrots and quartered onion, creating a bed for the beef.
- Place the marinated beef roast on top of the vegetables.
- Pour the red wine and beef broth over the roast and cover the pot with a lid.
- Bake in the preheated oven for 90 minutes, basting the roast with the cooking liquid halfway through.
- After 90 minutes, remove the lid and bake for an additional 15 minutes to develop a nice crust.
- Remove from the oven and let the roast rest for 10 minutes before slicing.
- Serve with the roasted vegetables and a drizzle of the pan juices.
