Ingredients

  • Beef roast (chuck or round) - 500 grams
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Fresh rosemary - 2 sprigs, chopped
  • Fresh thyme - 2 sprigs, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Carrots - 2 medium, chopped
  • Onion - 1 large, quartered
  • Red wine - 100 milliliters
  • Beef broth - 200 milliliters

Steps

  1. Preheat your oven to 160°C (320°F).
  2. In a large bowl, combine olive oil, minced garlic, rosemary, thyme, salt, and black pepper to create a marinade.
  3. Rub the marinade all over the beef roast and let it sit at room temperature for 30 minutes.
  4. In a large oven-safe pot, add the chopped carrots and quartered onion, creating a bed for the beef.
  5. Place the marinated beef roast on top of the vegetables.
  6. Pour the red wine and beef broth over the roast and cover the pot with a lid.
  7. Bake in the preheated oven for 90 minutes, basting the roast with the cooking liquid halfway through.
  8. After 90 minutes, remove the lid and bake for an additional 15 minutes to develop a nice crust.
  9. Remove from the oven and let the roast rest for 10 minutes before slicing.
  10. Serve with the roasted vegetables and a drizzle of the pan juices.
