- Firm tofu - 400 grams
- Zucchini - 1 medium
- Red bell pepper - 1 medium
- Cherry tomatoes - 200 grams
- Olive oil - 2 tablespoons
- Fresh rosemary - 2 teaspoons, chopped
- Garlic powder - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Bamboo skewers - 4 (soaked in water for 30 minutes)
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut it into 2 cm cubes.
- Slice the zucchini and red bell pepper into similar-sized cubes as the tofu.
- In a large bowl, combine the olive oil, chopped rosemary, garlic powder, smoked paprika, salt, and black pepper to create a marinade.
- Add the tofu, zucchini, red bell pepper, and cherry tomatoes to the marinade, tossing gently to coat all the vegetables and tofu evenly. Let it marinate for at least 10 minutes.
- Preheat the grill or grill pan over medium-high heat.
- Thread the marinated tofu and vegetables onto the soaked bamboo skewers, alternating between different ingredients.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the tofu is golden and the vegetables are tender.
- Serve warm, drizzled with a little extra olive oil if desired.
