Ingredients

  • Pork loin - 500 grams
  • Garlic - 4 cloves, minced
  • Fresh rosemary - 2 sprigs, chopped
  • Fresh thyme - 2 sprigs, chopped
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Lemon - 1, juiced
  • White wine - 100 ml

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix the minced garlic, chopped rosemary, thyme, olive oil, salt, pepper, and lemon juice to create a marinade.
  3. Rub the marinade all over the pork loin, ensuring it is evenly coated. Let it marinate for at least 30 minutes at room temperature.
  4. In a large oven-safe skillet, heat a little olive oil over medium-high heat. Sear the pork loin on all sides until golden brown, about 3-4 minutes per side.
  5. Pour the white wine into the skillet around the pork loin, then transfer the skillet to the preheated oven.
  6. Roast the pork for 30-35 minutes, or until the internal temperature reaches 70°C (160°F).
  7. Remove from the oven and let the pork rest for 10 minutes before slicing.
  8. Slice the pork loin and serve with the pan juices drizzled on top.
