- Eggs - 2 large

- Water - 100 ml
- Ricotta cheese - 250 grams
- Fresh spinach - 100 grams
- Parmesan cheese, grated - 50 grams
- Garlic, minced - 1 clove
- Olive oil - 1 tablespoon
- Tomato sauce - 200 ml
- Black pepper - to taste
- Nutmeg - a pinch
Steps
- In a mixing bowl, combine almond flour, eggs, salt, and water to create a smooth batter.
- Heat a non-stick skillet over medium heat and lightly grease with olive oil.
- Pour a small amount of batter into the skillet, swirling to form a thin crepe. Cook for 1-2 minutes on each side until lightly golden. Repeat with remaining batter, placing cooked crepes on a plate.
- In another skillet, heat olive oil over medium heat and sauté minced garlic until fragrant. Add fresh spinach and cook until wilted. Remove from heat and let cool slightly.
- In a mixing bowl, combine ricotta cheese, sautéed spinach, grated Parmesan, black pepper, and a pinch of nutmeg. Mix until well combined.
- Take a crepe and place a spoonful of the ricotta mixture at one end. Roll it up tightly and place seam-side down in a baking dish. Repeat with all crepes.
- Pour the tomato sauce evenly over the rolled cannelloni in the baking dish.
- Preheat the oven to 180°C (350°F) and bake the cannelloni for 20 minutes until heated through.
- Remove from the oven and let cool for a few minutes before serving.
