- Sea salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Carrots - 2, sliced
- Zucchini - 1, sliced
- Red onion - 1, quartered
Steps
- Preheat the oven to 180°C (350°F).
- In a small bowl, combine minced garlic, chopped rosemary, chopped thyme, olive oil, lemon juice, sea salt, and black pepper to create a marinade.
- Rub the marinade all over the lamb shoulder, ensuring it is well-coated. Let it marinate for at least 30 minutes at room temperature.
- In a roasting pan, add the sliced carrots, zucchini, and quartered red onion, creating a bed for the lamb.
- Place the marinated lamb shoulder on top of the vegetables in the roasting pan.
- Cover the roasting pan with aluminum foil and place it in the preheated oven.
- Roast for 90 minutes, removing the foil for the last 30 minutes to allow the lamb to brown.
- Once cooked, remove the lamb from the oven and let it rest for 10 minutes before slicing.
- Serve the lamb slices with the roasted vegetables.
