  • Lamb shoulder - 500 grams

  • Fresh thyme - 2 sprigs, chopped
  • Olive oil - 2 tablespoons
  • Lemon - 1, juiced
  • Sea salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Carrots - 2, sliced
  • Zucchini - 1, sliced
  • Red onion - 1, quartered

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a small bowl, combine minced garlic, chopped rosemary, chopped thyme, olive oil, lemon juice, sea salt, and black pepper to create a marinade.
  3. Rub the marinade all over the lamb shoulder, ensuring it is well-coated. Let it marinate for at least 30 minutes at room temperature.
  4. In a roasting pan, add the sliced carrots, zucchini, and quartered red onion, creating a bed for the lamb.
  5. Place the marinated lamb shoulder on top of the vegetables in the roasting pan.
  6. Cover the roasting pan with aluminum foil and place it in the preheated oven.
  7. Roast for 90 minutes, removing the foil for the last 30 minutes to allow the lamb to brown.
  8. Once cooked, remove the lamb from the oven and let it rest for 10 minutes before slicing.
  9. Serve the lamb slices with the roasted vegetables.
