  • Green chili - 1 (slit or chopped)
  • Ginger - 1 teaspoon (grated)
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Salt - to taste
  • Curry leaves - 8-10 leaves
  • Olive oil - 2 tablespoons
  • Fresh coriander - 2 tablespoons (chopped, for garnish)
  • Lemon juice - 1 tablespoon

Steps

  1. Heat olive oil in a non-stick pan over medium heat.
  2. Add mustard seeds and let them splutter, then add cumin seeds.
  3. Once they start to sizzle, add the chopped onions, green chili, and grated ginger. Sauté until the onions are translucent.
  4. Add curry leaves and turmeric powder, stirring well for a minute.
  5. Incorporate the grated zucchini and salt, mixing thoroughly.
  6. Cook for about 5-7 minutes until the zucchini softens, stirring occasionally.
  7. Remove from heat and add lemon juice, mixing again.
  8. Garnish with fresh coriander and serve hot.
