Ingredients
- Zucchini - 2 medium-sized (about 300g)
- Olive oil - 2 tablespoons
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Coriander powder - 1 teaspoon
- Green chili - 1, finely chopped (adjust to taste)
- Onion - 1 small, finely chopped
- Tomato - 1 medium, chopped
- Salt - to taste
- Fresh cilantro - a handful, chopped (for garnish)
Steps
- Spiralize the zucchini using a spiralizer or a vegetable peeler to create noodle-like strands and set aside.
- In a large skillet, heat the olive oil over medium heat, and add the mustard seeds and cumin seeds. Allow them to sizzle for about 30 seconds until fragrant.
- Add the chopped onion and green chili to the skillet. Sauté for 3-4 minutes until the onion is translucent.
- Stir in the turmeric powder, garam masala, and coriander powder, mixing well for about a minute to toast the spices.
- Add the chopped tomato and salt, cooking for another 5 minutes until the tomato softens and the mixture is well combined.
- Finally, add the zucchini noodles to the skillet and toss everything together, cooking for an additional 3-4 minutes until the zucchini is tender but still slightly crunchy.
- Remove from heat, garnish with fresh cilantro, and serve immediately.
