  • Garam masala - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Green chili - 1, finely chopped (adjust to taste)
  • Onion - 1 small, finely chopped
  • Tomato - 1 medium, chopped
  • Salt - to taste
  • Fresh cilantro - a handful, chopped (for garnish)

Steps

  1. Spiralize the zucchini using a spiralizer or a vegetable peeler to create noodle-like strands and set aside.
  2. In a large skillet, heat the olive oil over medium heat, and add the mustard seeds and cumin seeds. Allow them to sizzle for about 30 seconds until fragrant.
  3. Add the chopped onion and green chili to the skillet. Sauté for 3-4 minutes until the onion is translucent.
