Ingredients

  • Zucchini - 2 medium-sized (about 400g)
  • Cauliflower rice - 1 cup (150g)
  • Onion - 1 medium, thinly sliced (about 100g)
  • Tomato - 1 medium, chopped (about 100g)
  • Ginger - 1 inch, grated
  • Garlic - 3 cloves, minced
  • Green chili - 1, slit
  • Biryani masala - 1 tablespoon
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Coconut oil - 2 tablespoons
  • Fresh cilantro - a handful, chopped
  • Salt - to taste
  • Water - 1/2 cup (120ml)

Steps

  1. Spiralize the zucchini using a spiralizer or a vegetable peeler to create noodle-like strands.
  2. Heat coconut oil in a large pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  3. Add sliced onions and sauté until they turn golden brown.
  4. Stir in ginger, garlic, and green chili, cooking for another minute until fragrant.
  5. Add chopped tomatoes and cook until they soften and release their juices.
  6. Sprinkle in the biryani masala, turmeric powder, coriander powder, and salt. Mix well and cook for 2-3 minutes.
  7. Add cauliflower rice and mix until well combined with the spice mixture.
  8. Pour in the water, cover the pan, and let it cook for about 5 minutes on low heat.
  9. Add the zucchini noodles and gently fold them into the mixture, ensuring they are coated with spices.
  10. Cover the pan again and cook for another 5-7 minutes until the zucchini noodles are tender but not mushy.
  11. Sprinkle garam masala and chopped cilantro before serving.
