- Cauliflower rice - 1 cup (150g)
- Onion - 1 medium, thinly sliced (about 100g)
- Tomato - 1 medium, chopped (about 100g)
- Ginger - 1 inch, grated
- Garlic - 3 cloves, minced
- Green chili - 1, slit
- Biryani masala - 1 tablespoon
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Coconut oil - 2 tablespoons
- Fresh cilantro - a handful, chopped
- Salt - to taste
- Water - 1/2 cup (120ml)
Steps
- Spiralize the zucchini using a spiralizer or a vegetable peeler to create noodle-like strands.
- Heat coconut oil in a large pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add sliced onions and sauté until they turn golden brown.
- Stir in ginger, garlic, and green chili, cooking for another minute until fragrant.
- Add chopped tomatoes and cook until they soften and release their juices.
- Sprinkle in the biryani masala, turmeric powder, coriander powder, and salt. Mix well and cook for 2-3 minutes.
- Add cauliflower rice and mix until well combined with the spice mixture.
- Pour in the water, cover the pan, and let it cook for about 5 minutes on low heat.
- Add the zucchini noodles and gently fold them into the mixture, ensuring they are coated with spices.
- Cover the pan again and cook for another 5-7 minutes until the zucchini noodles are tender but not mushy.
- Sprinkle garam masala and chopped cilantro before serving.
