- Zucchini - 200 grams
- Almond flour - 50 grams
- Chickpea flour - 30 grams
- Fresh coriander - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Green chili - 1, finely chopped
- Oil - 1 tablespoon (for brushing)
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Tomato puree - 100 grams
- Coconut milk - 100 ml
- Water - 100 ml
Steps
- Preheat the oven to 200°C (390°F).
- Grate the zucchini and squeeze out excess moisture using a clean cloth.
- In a bowl, combine the grated zucchini, almond flour, chickpea flour, coriander, cumin powder, garam masala, turmeric powder, salt, black pepper, and green chili. Mix well until a dough forms.
- Shape the mixture into small kofta balls (about 2.5 cm in diameter) and place them on a baking tray lined with parchment paper. Brush with oil.
- Bake the koftas in the preheated oven for 20-25 minutes, turning halfway, until golden brown.
- While the koftas are baking, heat a pan over medium heat and add a bit of oil. Sauté the chopped onion until translucent.
- Add the minced garlic and grated ginger to the pan and sauté for another minute until fragrant.
- Stir in the tomato puree and cook for 5 minutes until thickened, then add the coconut milk and water. Bring to a simmer.
- Once the koftas are done baking, gently add them to the curry sauce and let them simmer for an additional 5 minutes.
- Serve the Zucchini Kofta Curry hot, garnished with additional fresh coriander.
