Ingredients

  • Zucchini - 200 grams
  • Almond flour - 50 grams
  • Chickpea flour - 30 grams
  • Fresh coriander - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Green chili - 1, finely chopped
  • Oil - 1 tablespoon (for brushing)
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Tomato puree - 100 grams
  • Coconut milk - 100 ml
  • Water - 100 ml

Steps

  1. Preheat the oven to 200°C (390°F).
  2. Grate the zucchini and squeeze out excess moisture using a clean cloth.
  3. In a bowl, combine the grated zucchini, almond flour, chickpea flour, coriander, cumin powder, garam masala, turmeric powder, salt, black pepper, and green chili. Mix well until a dough forms.
  4. Shape the mixture into small kofta balls (about 2.5 cm in diameter) and place them on a baking tray lined with parchment paper. Brush with oil.
  5. Bake the koftas in the preheated oven for 20-25 minutes, turning halfway, until golden brown.
  6. While the koftas are baking, heat a pan over medium heat and add a bit of oil. Sauté the chopped onion until translucent.
  7. Add the minced garlic and grated ginger to the pan and sauté for another minute until fragrant.
  8. Stir in the tomato puree and cook for 5 minutes until thickened, then add the coconut milk and water. Bring to a simmer.
  9. Once the koftas are done baking, gently add them to the curry sauce and let them simmer for an additional 5 minutes.
  10. Serve the Zucchini Kofta Curry hot, garnished with additional fresh coriander.
