- Zucchini - 200 grams
- Chickpea flour (besan) - 50 grams
- Cilantro (chopped) - 2 tablespoons
- Green chili (finely chopped) - 1 small
- Ginger (grated) - 1 teaspoon
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Water - 2 tablespoons
- Oil (for frying) - 2 tablespoons
Steps
- Grate the zucchini using a box grater and place it in a clean kitchen towel to squeeze out excess moisture.
- In a mixing bowl, combine the drained zucchini, chickpea flour, chopped cilantro, green chili, grated ginger, cumin powder, turmeric powder, salt, and black pepper.
- Add water to the mixture gradually until it forms a thick batter.
- Heat oil in a frying pan over medium heat.
- Spoon out small portions of the batter into the hot oil, flattening them slightly to form fritters.
- Fry the fritters for about 3-4 minutes on each side or until golden brown and crispy.
- Remove the fritters from the pan and place them on paper towels to absorb excess oil.
- Serve hot with mint chutney or yogurt dip.
