Ingredients

  • Zucchini - 200 grams
  • Chickpea flour (besan) - 50 grams
  • Cilantro (chopped) - 2 tablespoons
  • Green chili (finely chopped) - 1 small
  • Ginger (grated) - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Water - 2 tablespoons
  • Oil (for frying) - 2 tablespoons

Steps

  1. Grate the zucchini using a box grater and place it in a clean kitchen towel to squeeze out excess moisture.
  2. In a mixing bowl, combine the drained zucchini, chickpea flour, chopped cilantro, green chili, grated ginger, cumin powder, turmeric powder, salt, and black pepper.
  3. Add water to the mixture gradually until it forms a thick batter.
  4. Heat oil in a frying pan over medium heat.
  5. Spoon out small portions of the batter into the hot oil, flattening them slightly to form fritters.
  6. Fry the fritters for about 3-4 minutes on each side or until golden brown and crispy.
  7. Remove the fritters from the pan and place them on paper towels to absorb excess oil.
  8. Serve hot with mint chutney or yogurt dip.
