  • Mustard seeds - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon

  • Fresh coriander leaves - a handful, chopped
  • Cooking oil - 2 tablespoons

Steps

  1. Wash the zucchini thoroughly, then slice them into thin rounds or half-moons.
  2. Heat the cooking oil in a pan over medium heat. Add the mustard seeds and cumin seeds, allowing them to splutter.
  3. Add the sliced onion and sauté until it becomes translucent.
  4. Stir in the minced garlic, grated ginger, and chopped green chili. Sauté for 1-2 minutes until fragrant.
  5. Add the turmeric powder, coriander powder, and salt. Mix well.
  6. Add the sliced zucchini to the pan, stirring to coat them with the spices.
  7. Cover the pan and cook for about 10-12 minutes, stirring occasionally until the zucchini is tender.
  8. Remove the lid and sprinkle the garam masala. Cook for an additional 2-3 minutes, allowing any excess moisture to evaporate.
  9. Turn off the heat and stir in the chopped fresh coriander leaves before serving.
