Ingredients
- Basmati rice - 150 grams
- Water - 400 ml
- Saffron strands - 1/4 teaspoon
- Ghee (clarified butter) - 2 tablespoons
- Cinnamon stick - 1 inch
- Green cardamom pods - 3
- Cloves - 2
- Bay leaf - 1
- Salt - 1/2 teaspoon
- Mixed nuts (cashews, almonds, raisins) - 50 grams
- Sugar - 1 teaspoon
- Fresh coriander leaves - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes. Drain and set aside.
- In a small bowl, soak the saffron strands in 2 tablespoons of warm water to release their color and flavor.
- In a large pot, heat the ghee over medium heat. Add the cinnamon stick, green cardamom pods, cloves, and bay leaf, and sauté for 1-2 minutes until fragrant.
- Add the soaked and drained rice to the pot, and gently stir to coat the rice in the ghee and spices.
- Pour in the water, add salt, and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes.
- After 15 minutes, remove the pot from heat and let it sit, covered, for an additional 5 minutes to allow the rice to steam.
- Meanwhile, in a small pan, lightly toast the mixed nuts until golden brown. Add sugar and stir until the sugar dissolves and coats the nuts.
- Fluff the rice with a fork and gently mix in the saffron water and toasted nuts.
- Garnish with fresh coriander leaves before serving.
