Ingredients

  • Basmati rice - 150 grams
  • Water - 400 ml
  • Saffron strands - 1/4 teaspoon
  • Ghee (clarified butter) - 2 tablespoons
  • Cinnamon stick - 1 inch
  • Green cardamom pods - 3
  • Cloves - 2
  • Bay leaf - 1
  • Salt - 1/2 teaspoon
  • Mixed nuts (cashews, almonds, raisins) - 50 grams
  • Sugar - 1 teaspoon
  • Fresh coriander leaves - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes. Drain and set aside.
  2. In a small bowl, soak the saffron strands in 2 tablespoons of warm water to release their color and flavor.
  3. In a large pot, heat the ghee over medium heat. Add the cinnamon stick, green cardamom pods, cloves, and bay leaf, and sauté for 1-2 minutes until fragrant.
  4. Add the soaked and drained rice to the pot, and gently stir to coat the rice in the ghee and spices.
  5. Pour in the water, add salt, and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes.
  6. After 15 minutes, remove the pot from heat and let it sit, covered, for an additional 5 minutes to allow the rice to steam.
  7. Meanwhile, in a small pan, lightly toast the mixed nuts until golden brown. Add sugar and stir until the sugar dissolves and coats the nuts.
  8. Fluff the rice with a fork and gently mix in the saffron water and toasted nuts.
  9. Garnish with fresh coriander leaves before serving.
