Ingredients

  • Wild rice - 100 grams
  • Chicken breast - 200 grams, diced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Coconut milk - 200 ml
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Spinach - 50 grams, fresh

Steps

  1. Rinse the wild rice under cold water until the water runs clear, then soak for 30 minutes.
  2. In a pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, diced carrot, and celery. Cook for another 5 minutes until the vegetables start to soften.
  4. Stir in the diced chicken breast and cook until browned, about 5 minutes.
  5. Add the soaked wild rice (drained), vegetable broth, coconut milk, thyme, bay leaf, salt, and black pepper to the pot. Bring to a boil.
  6. Reduce the heat to low and cover the pot. Let simmer for about 30 minutes, or until the wild rice is tender.
  7. Add the fresh spinach and stir until wilted, about 2 minutes.
  8. Remove the bay leaf and serve hot in bowls.
