- Wild rice - 100 grams
- Chicken breast - 200 grams, diced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Coconut milk - 200 ml
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Spinach - 50 grams, fresh
Steps
- Rinse the wild rice under cold water until the water runs clear, then soak for 30 minutes.
- In a pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, and celery. Cook for another 5 minutes until the vegetables start to soften.
- Stir in the diced chicken breast and cook until browned, about 5 minutes.
- Add the soaked wild rice (drained), vegetable broth, coconut milk, thyme, bay leaf, salt, and black pepper to the pot. Bring to a boil.
- Reduce the heat to low and cover the pot. Let simmer for about 30 minutes, or until the wild rice is tender.
- Add the fresh spinach and stir until wilted, about 2 minutes.
- Remove the bay leaf and serve hot in bowls.
