- Mushrooms (shiitake or cremini) - 100 grams, sliced
- Dried thyme - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the wild rice under cold water and drain.
- In a medium pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5-7 minutes until the vegetables are softened.
- Add the minced garlic and sliced mushrooms to the pot, cooking for an additional 3-4 minutes until the mushrooms release their moisture.
- Stir in the wild rice, dried thyme, salt, and black pepper, mixing well with the vegetables.
