  • Yellow onion - 1 medium, diced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Garlic - 2 cloves, minced
  • Vegetable broth - 750 ml
  • Mushrooms (shiitake or cremini) - 100 grams, sliced
  • Dried thyme - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the wild rice under cold water and drain.
  2. In a medium pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5-7 minutes until the vegetables are softened.
  3. Add the minced garlic and sliced mushrooms to the pot, cooking for an additional 3-4 minutes until the mushrooms release their moisture.
  4. Stir in the wild rice, dried thyme, salt, and black pepper, mixing well with the vegetables.
  5. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 30 minutes, or until the wild rice is tender.
