- Water - 500 ml

- Lemon juice - 2 tablespoons
- Olive oil - 1 tablespoon

Steps
- Rinse the wild rice under cold water and drain.
- In a medium saucepan, bring 500 ml of water to a boil.
- Add the wild rice to the boiling water, reduce the heat to low, and cover. Simmer for about 35-40 minutes, or until the rice is tender and the grains have burst open.
- While the rice is cooking, prepare the vegetables: dice the cucumber and red bell pepper, grate the carrot, and chop the green onions and cilantro.
