Ingredients

  • Wild rice - 100 grams
  • Water - 500 ml
  • Cucumber - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Carrot - 1 medium, grated
  • Green onions - 2, chopped
  • Fresh cilantro - 30 grams, chopped
  • Lemon juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the wild rice under cold water and drain.
  2. In a medium saucepan, bring 500 ml of water to a boil.
  3. Add the wild rice to the boiling water, reduce the heat to low, and cover. Simmer for about 35-40 minutes, or until the rice is tender and the grains have burst open.
  4. While the rice is cooking, prepare the vegetables: dice the cucumber and red bell pepper, grate the carrot, and chop the green onions and cilantro.
  5. In a large mixing bowl, combine the diced cucumber, red bell pepper, grated carrot, chopped green onions, and cilantro.
  6. Once the wild rice is cooked, drain any excess water and allow it to cool slightly.
  7. Add the cooked wild rice to the vegetable mixture.
  8. In a small bowl, whisk together the lemon juice, olive oil, cumin, salt, and black pepper.
  9. Pour the dressing over the wild rice salad and mix well to combine all ingredients.
