- Wild rice - 1/2 cup (100g)
- Water - 1 1/2 cups (360ml)
- Coconut oil - 2 tablespoons (30ml)
- Cumin seeds - 1 teaspoon (5g)
- Coriander powder - 1 teaspoon (3g)
- Turmeric powder - 1/2 teaspoon (2g)
- Salt - 1/2 teaspoon (3g)
- Black pepper - 1/4 teaspoon (1g)
- Chili powder - 1/4 teaspoon (1g)
- Fresh cilantro - 1/4 cup (10g), chopped
Steps
- Rinse the wild rice under cold water until the water runs clear.
- In a medium saucepan, combine the rinsed wild rice and water. Bring to a boil over high heat.
- Once boiling, reduce the heat to low, cover, and simmer for about 20-25 minutes, or until the rice is tender and water is absorbed.
- Remove from heat and let the rice cool for a few minutes before fluffing it with a fork.
- In a skillet, heat the coconut oil over medium heat. Add cumin seeds and sauté for about 30 seconds until fragrant.
- Stir in the coriander powder, turmeric powder, salt, black pepper, and chili powder. Cook for another minute.
- Add the cooked wild rice to the skillet and mix well to coat the rice with the spice mixture.
- Spread the rice evenly on a baking sheet lined with parchment paper.
- Bake in a preheated oven at 180°C (350°F) for 10-15 minutes, or until the rice is crispy and golden brown.
- Remove from the oven and sprinkle with chopped cilantro before serving.
