Ingredients
- Wild rice - 1/2 cup (90g)
- Coconut milk - 1 cup (240ml)
- Honey - 2 tablespoons (30ml)
- Vanilla extract - 1 teaspoon (5ml)
- Cinnamon - 1/2 teaspoon (2g)
- Cardamom - 1/4 teaspoon (1g)
- Salt - a pinch
- Chopped nuts (almonds or walnuts) - 2 tablespoons (15g)
- Dried fruits (raisins or cranberries) - 2 tablespoons (30g)
Steps
- Rinse the wild rice under cold water to remove any debris or impurities.
- In a pot, combine the rinsed wild rice and 1 1/2 cups (360ml) of water. Bring to a boil over medium heat.
- Once boiling, reduce the heat to low, cover, and simmer for about 30-35 minutes or until the rice is tender and most of the water is absorbed.
- In a separate saucepan, combine the cooked wild rice, coconut milk, honey, vanilla extract, cinnamon, cardamom, and a pinch of salt.
- Stir well and cook over low heat for an additional 5-10 minutes, allowing the flavors to meld and the mixture to thicken slightly.
- Remove from heat and fold in the chopped nuts and dried fruits.
- Serve warm or chilled in bowls, topped with additional nuts or a drizzle of honey if desired.
