Ingredients

  • Wild rice - 1/2 cup (90g)
  • Coconut milk - 1 cup (240ml)
  • Honey - 2 tablespoons (30ml)
  • Vanilla extract - 1 teaspoon (5ml)
  • Cinnamon - 1/2 teaspoon (2g)
  • Cardamom - 1/4 teaspoon (1g)
  • Salt - a pinch
  • Chopped nuts (almonds or walnuts) - 2 tablespoons (15g)
  • Dried fruits (raisins or cranberries) - 2 tablespoons (30g)

Steps

  1. Rinse the wild rice under cold water to remove any debris or impurities.
  2. In a pot, combine the rinsed wild rice and 1 1/2 cups (360ml) of water. Bring to a boil over medium heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for about 30-35 minutes or until the rice is tender and most of the water is absorbed.
  4. In a separate saucepan, combine the cooked wild rice, coconut milk, honey, vanilla extract, cinnamon, cardamom, and a pinch of salt.
  5. Stir well and cook over low heat for an additional 5-10 minutes, allowing the flavors to meld and the mixture to thicken slightly.
  6. Remove from heat and fold in the chopped nuts and dried fruits.
  7. Serve warm or chilled in bowls, topped with additional nuts or a drizzle of honey if desired.
