Ingredients

  • Coconut milk - 400 ml
  • Water - 2 cups (500 ml)
  • Cinnamon - 1 tsp
  • Ginger (fresh, grated) - 1 tsp
  • Salt - 1/4 tsp
  • Chopped nuts (almonds, walnuts, or pecans) - 1/4 cup (30g)
  • Fresh fruits (banana, apple, or berries) - 1/2 cup (75g)
  • Honey or maple syrup (optional) - 1 tbsp

Steps

  1. Rinse the wild rice under cold water until the water runs clear.
  2. In a medium pot, combine the rinsed wild rice, water, and salt. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for about 30-35 minutes or until the wild rice is tender and opened.
  4. Stir in the coconut milk, cinnamon, and grated ginger, cooking for an additional 5-10 minutes until heated through.
  5. Remove from heat and let it sit for a few minutes to thicken.
