Ingredients

  • Wild rice - 100 grams
  • Water - 500 ml
  • Olive oil - 1 tablespoon
  • Onion - 1 small, diced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Garlic - 2 cloves, minced
  • Mushrooms - 100 grams, sliced
  • Cumin - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Salt - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the wild rice under cold water until the water runs clear.
  2. In a medium saucepan, bring the water to a boil. Add the wild rice, reduce heat to low, cover, and simmer for about 30 minutes until the rice is tender and the grains have split open.
  3. While the rice is cooking, heat olive oil in a skillet over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until softened.
  4. Stir in the minced garlic and sliced mushrooms, cooking for an additional 5 minutes until the mushrooms are tender.
  5. Add the cumin, turmeric, black pepper, and salt to the vegetable mixture, stirring to combine.
  6. Once the wild rice is cooked, drain any excess water and add it to the skillet with the sautéed vegetables. Mix well to incorporate all ingredients.
  7. Remove from heat and stir in the chopped fresh parsley before serving.
