- Wild rice - 100 grams
- Water - 500 ml
- Olive oil - 1 tablespoon
- Onion - 1 small, diced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Garlic - 2 cloves, minced
- Mushrooms - 100 grams, sliced
- Cumin - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Salt - to taste
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the wild rice under cold water until the water runs clear.
- In a medium saucepan, bring the water to a boil. Add the wild rice, reduce heat to low, cover, and simmer for about 30 minutes until the rice is tender and the grains have split open.
- While the rice is cooking, heat olive oil in a skillet over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until softened.
- Stir in the minced garlic and sliced mushrooms, cooking for an additional 5 minutes until the mushrooms are tender.
- Add the cumin, turmeric, black pepper, and salt to the vegetable mixture, stirring to combine.
- Once the wild rice is cooked, drain any excess water and add it to the skillet with the sautéed vegetables. Mix well to incorporate all ingredients.
- Remove from heat and stir in the chopped fresh parsley before serving.
