Ingredients

  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Coconut oil - 2 tablespoons (for frying)

Steps

  1. Rinse the wild rice under cold water and then combine it with 2 cups of water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 30-35 minutes until the rice is tender and the water is absorbed.
  2. Once cooked, fluff the wild rice with a fork and let it cool slightly.
  3. In a large mixing bowl, combine the cooked wild rice, coconut flour, chopped scallions, chopped cilantro, garlic powder, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
  4. Form the mixture into small patties, about 2 inches in diameter, ensuring they hold together well.
  5. Heat coconut oil in a large skillet over medium heat. Once hot, add the rice cakes to the skillet, working in batches if necessary, and fry for about 3-4 minutes on each side, or until golden brown and crispy.
