Steps
- Rinse the wild rice under cold water and then combine it with 2 cups of water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 30-35 minutes until the rice is tender and the water is absorbed.
- Once cooked, fluff the wild rice with a fork and let it cool slightly.

- Form the mixture into small patties, about 2 inches in diameter, ensuring they hold together well.
- Heat coconut oil in a large skillet over medium heat. Once hot, add the rice cakes to the skillet, working in batches if necessary, and fry for about 3-4 minutes on each side, or until golden brown and crispy.
- Remove the cakes from the skillet and place them on a paper towel-lined plate to drain excess oil. Serve warm.
