Ingredients

  • Wild rice - 100 grams
  • Water - 500 ml
  • Coconut oil - 1 tablespoon
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Bell pepper - 1 small, diced
  • Spinach - 50 grams, chopped
  • Turmeric powder - 1/2 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Eggs - 2
  • Fresh cilantro - for garnish

Steps

  1. Rinse the wild rice under cold water and combine it with water in a pot. Bring to a boil, then reduce the heat, cover, and simmer for about 20-25 minutes, or until tender.
  2. In a large skillet, heat the coconut oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  4. Add the diced bell pepper, turmeric powder, cumin powder, salt, and black pepper to the skillet. Sauté for another 5 minutes until the bell pepper is tender.
  5. Fold in the chopped spinach and cook until wilted, about 2 minutes. Remove from heat and set aside.
  6. Once the wild rice is cooked, fluff it with a fork and divide it between two bowls.
  7. In a separate pot, bring water to a gentle simmer and poach the eggs one at a time for about 3-4 minutes until the whites are set but yolks remain runny.
  8. Top the wild rice with the sautéed vegetable mixture and a poached egg on each bowl. Garnish with fresh cilantro before serving.
