Ingredients
- Wild rice - 100 grams
- Water - 500 ml
- Coconut oil - 1 tablespoon
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Bell pepper - 1 small, diced
- Spinach - 50 grams, chopped
- Turmeric powder - 1/2 teaspoon
- Cumin powder - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Eggs - 2
- Fresh cilantro - for garnish
Steps
- Rinse the wild rice under cold water and combine it with water in a pot. Bring to a boil, then reduce the heat, cover, and simmer for about 20-25 minutes, or until tender.
- In a large skillet, heat the coconut oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
- Add the diced bell pepper, turmeric powder, cumin powder, salt, and black pepper to the skillet. Sauté for another 5 minutes until the bell pepper is tender.
- Fold in the chopped spinach and cook until wilted, about 2 minutes. Remove from heat and set aside.
- Once the wild rice is cooked, fluff it with a fork and divide it between two bowls.
- In a separate pot, bring water to a gentle simmer and poach the eggs one at a time for about 3-4 minutes until the whites are set but yolks remain runny.
- Top the wild rice with the sautéed vegetable mixture and a poached egg on each bowl. Garnish with fresh cilantro before serving.
