- Cumin powder - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Coriander powder - 1/2 teaspoon
- Salt - 1/2 teaspoon, or to taste
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Paleo bread (almond flour bread) - 2 slices
- Lemon juice - 1 tablespoon
Steps
- Heat the olive oil in a skillet over medium heat.
- Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Add the chopped mixed mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until they are tender and browned.
- Sprinkle in the cumin, turmeric, coriander, salt, and black pepper, stirring well to combine. Cook for an additional 2-3 minutes.
- Remove the skillet from heat and stir in the chopped cilantro and lemon juice.
- While the mushroom mixture cools slightly, toast the Paleo bread slices in a toaster or on a skillet until golden brown.
- Top each slice of bread with the wild mushroom mixture and serve immediately.
