Ingredients

  • Mixed wild mushrooms (shiitake, oyster, cremini) - 200 grams, chopped

  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cumin powder - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Coriander powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon, or to taste
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Paleo bread (almond flour bread) - 2 slices
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  3. Add the chopped mixed mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until they are tender and browned.
  4. Sprinkle in the cumin, turmeric, coriander, salt, and black pepper, stirring well to combine. Cook for an additional 2-3 minutes.
  5. Remove the skillet from heat and stir in the chopped cilantro and lemon juice.
  6. While the mushroom mixture cools slightly, toast the Paleo bread slices in a toaster or on a skillet until golden brown.
  7. Top each slice of bread with the wild mushroom mixture and serve immediately.
