  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh coriander - for garnish

Steps

  1. Heat the coconut oil in a large pot over medium heat.
  2. Add the finely chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  4. Add the diced carrot and celery to the pot, cooking for another 5 minutes until they begin to soften.
  5. Slice the mixed wild mushrooms and add them to the pot, stirring well to combine.
  6. Sprinkle in the cumin powder, turmeric powder, salt, and black pepper, mixing thoroughly to coat the vegetables and mushrooms.
  7. Pour in the vegetable broth and coconut milk, bringing the mixture to a gentle simmer.
  8. Add the chopped fresh thyme and allow the stew to simmer for 15-20 minutes, stirring occasionally, until the vegetables are tender and the flavors meld together.
