- Almond flour - 150 grams
- Ground flaxseed - 30 grams
- Olive oil - 2 tablespoons
- Water - 100 milliliters
- Salt - 1 teaspoon
- Mixed wild mushrooms (such as shiitake, oyster, and cremini) - 200 grams, chopped
- Garlic - 2 cloves, minced
- Fresh coriander - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Tomato sauce (no added sugar) - 100 grams
- Spinach - 50 grams, chopped
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, ground flaxseed, olive oil, water, and salt to form a dough.
- Knead the dough for about 2-3 minutes until smooth, then press it into a pizza shape on a parchment-lined baking sheet.
- Bake the crust in the preheated oven for 15 minutes until lightly golden.
- While the crust is baking, heat a skillet over medium heat and add a bit of olive oil.
- Sauté the minced garlic for 1 minute until fragrant, then add the chopped wild mushrooms, cumin, and black pepper.
- Cook for about 5-7 minutes until the mushrooms are tender and any moisture has evaporated.
- Add the chopped spinach and fresh coriander to the skillet, cooking for an additional 2 minutes until wilted.
- Remove the crust from the oven and spread the tomato sauce evenly on top.
- Layer the sautéed mushroom and spinach mixture over the tomato sauce.
- Return the pizza to the oven and bake for another 10-12 minutes until everything is heated through.
- Slice and serve warm, garnished with additional fresh coriander if desired.
