Ingredients

  • Almond flour - 150 grams
  • Ground flaxseed - 30 grams
  • Olive oil - 2 tablespoons
  • Water - 100 milliliters
  • Salt - 1 teaspoon
  • Mixed wild mushrooms (such as shiitake, oyster, and cremini) - 200 grams, chopped
  • Garlic - 2 cloves, minced
  • Fresh coriander - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Tomato sauce (no added sugar) - 100 grams
  • Spinach - 50 grams, chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, ground flaxseed, olive oil, water, and salt to form a dough.
  3. Knead the dough for about 2-3 minutes until smooth, then press it into a pizza shape on a parchment-lined baking sheet.
  4. Bake the crust in the preheated oven for 15 minutes until lightly golden.
  5. While the crust is baking, heat a skillet over medium heat and add a bit of olive oil.
  6. Sauté the minced garlic for 1 minute until fragrant, then add the chopped wild mushrooms, cumin, and black pepper.
  7. Cook for about 5-7 minutes until the mushrooms are tender and any moisture has evaporated.
  8. Add the chopped spinach and fresh coriander to the skillet, cooking for an additional 2 minutes until wilted.
  9. Remove the crust from the oven and spread the tomato sauce evenly on top.
  10. Layer the sautéed mushroom and spinach mixture over the tomato sauce.
  11. Return the pizza to the oven and bake for another 10-12 minutes until everything is heated through.
  12. Slice and serve warm, garnished with additional fresh coriander if desired.
