  • Eggs - 4 large
  • Fresh wild herbs (such as coriander, mint, and dill) - 1 cup, finely chopped
  • Onion - 1 small, finely chopped
  • Green chili - 1, finely chopped (optional for heat)
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a mixing bowl, crack the eggs and whisk them until well combined. Add salt and black pepper to taste.
  2. Stir in the finely chopped wild herbs, onion, and green chili into the egg mixture until evenly distributed.
  3. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Once hot, pour in half of the egg mixture.
  4. Cook for 2-3 minutes until the edges start to set. Gently lift the edges with a spatula to allow uncooked egg to flow underneath.
  5. Once the omelette is mostly set, fold it in half and cook for an additional minute. Transfer to a plate and keep warm.
  6. Repeat the process with the remaining egg mixture, adding the other tablespoon of olive oil to the skillet before pouring in the eggs.
  7. Serve warm, garnished with extra herbs if desired.
