Ingredients
- Eggs - 4 large
- Fresh wild herbs (such as coriander, mint, and dill) - 1 cup, finely chopped
- Onion - 1 small, finely chopped
- Green chili - 1, finely chopped (optional for heat)
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- In a mixing bowl, crack the eggs and whisk them until well combined. Add salt and black pepper to taste.
- Stir in the finely chopped wild herbs, onion, and green chili into the egg mixture until evenly distributed.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Once hot, pour in half of the egg mixture.
- Cook for 2-3 minutes until the edges start to set. Gently lift the edges with a spatula to allow uncooked egg to flow underneath.
- Once the omelette is mostly set, fold it in half and cook for an additional minute. Transfer to a plate and keep warm.
- Repeat the process with the remaining egg mixture, adding the other tablespoon of olive oil to the skillet before pouring in the eggs.
- Serve warm, garnished with extra herbs if desired.
