- Water - 500 ml
- Spinach - 100 g, roughly chopped
- Dandelion greens - 50 g, roughly chopped
- Mustard greens - 50 g, roughly chopped
- Cilantro - 20 g, chopped
- Ginger - 1 inch piece, grated
- Garlic - 2 cloves, minced
- Green chili - 1, slit
- Turmeric powder - 1/2 tsp
- Cumin seeds - 1/2 tsp
- Coriander powder - 1/2 tsp
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tbsp
Steps
- In a large pot, bring the water to a boil over medium heat.
- Add the cumin seeds and let them sizzle for about 30 seconds.
- Stir in the grated ginger, minced garlic, and slit green chili, sautéing for 1-2 minutes until fragrant.
- Add the chopped wild greens (spinach, dandelion, mustard greens) to the pot and stir well.
- Sprinkle in the turmeric powder, coriander powder, salt, and black pepper, mixing everything together.
- Cover the pot and let the broth simmer for 15 minutes, allowing the greens to soften and the flavors to meld.
- Remove from heat, stir in the chopped cilantro and lemon juice.
- Serve hot, garnished with additional cilantro if desired.
