Ingredients

  • Water - 500 ml
  • Spinach - 100 g, roughly chopped
  • Dandelion greens - 50 g, roughly chopped
  • Mustard greens - 50 g, roughly chopped
  • Cilantro - 20 g, chopped
  • Ginger - 1 inch piece, grated
  • Garlic - 2 cloves, minced
  • Green chili - 1, slit
  • Turmeric powder - 1/2 tsp
  • Cumin seeds - 1/2 tsp
  • Coriander powder - 1/2 tsp
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tbsp

Steps

  1. In a large pot, bring the water to a boil over medium heat.
  2. Add the cumin seeds and let them sizzle for about 30 seconds.
  3. Stir in the grated ginger, minced garlic, and slit green chili, sautéing for 1-2 minutes until fragrant.
  4. Add the chopped wild greens (spinach, dandelion, mustard greens) to the pot and stir well.
  5. Sprinkle in the turmeric powder, coriander powder, salt, and black pepper, mixing everything together.
  6. Cover the pot and let the broth simmer for 15 minutes, allowing the greens to soften and the flavors to meld.
  7. Remove from heat, stir in the chopped cilantro and lemon juice.
  8. Serve hot, garnished with additional cilantro if desired.
