- Sea salt - 1 teaspoon
- Cayenne pepper - 1/4 teaspoon
- Dried rosemary - 1/2 teaspoon
Steps
- Trim any excess fat from the game meat and slice it into thin strips, about 0.5 cm thick.
- In a mixing bowl, combine the coconut aminos, apple cider vinegar, garlic powder, onion powder, smoked paprika, black pepper, sea salt, cayenne pepper, and dried rosemary to create a marinade.
- Add the meat strips to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 4 hours, preferably overnight.
- Preheat your oven to 70°C (160°F). Line a baking sheet with parchment paper or use a dehydrator if available.
- Arrange the marinated meat strips in a single layer on the prepared baking sheet, ensuring they do not overlap.
- Place the baking sheet in the oven and leave the door slightly ajar to allow moisture to escape. Dry the meat for 4-6 hours, or until it is firm and dry to the touch.
- Once dried, remove the jerky from the oven and let it cool completely.
- Store the jerky in an airtight container at room temperature for up to 2 weeks or in the refrigerator for longer freshness.
