  • Almond flour - 150 grams
  • Arrowroot powder - 50 grams
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Ground wild game meat (deer, elk, or bison) - 200 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 small, diced
  • Zucchini - 1 small, diced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, combine almond flour, arrowroot powder, salt, egg, and olive oil. Mix well until a dough forms.
  3. Roll out the dough between two sheets of parchment paper to your desired thickness (about 5 mm). Cut into two flatbreads and place on a baking sheet.
  4. In a skillet over medium heat, add olive oil and sauté onions and garlic until translucent, about 3-4 minutes.
  5. Add the ground wild game meat to the skillet and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  6. Stir in the diced red bell pepper, zucchini, cumin, and paprika. Cook for an additional 5 minutes until the vegetables are tender.
  7. Remove from heat and mix in cilantro and lime juice.
  8. Spread the wild game mixture evenly over the prepared flatbreads.
  9. Bake in the preheated oven for 10-12 minutes, until the edges are golden brown.
  10. Remove from the oven, let cool for a few minutes, slice, and serve hot.
