Ingredients

  • Wild boar ground meat - 400 grams
  • Red onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Cilantro - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Coconut oil - 2 tablespoons
  • Lettuce leaves - 4 large, for wrapping
  • Tomato - 1 medium, sliced
  • Cucumber - 1 small, sliced
  • Lemon juice - 1 tablespoon

Steps

  1. In a large bowl, combine the wild boar ground meat, chopped red onion, minced garlic, grated ginger, chopped cilantro, cumin powder, coriander powder, garam masala, salt, and black pepper. Mix until well combined.
  2. Form the mixture into two equal-sized patties, about 2 cm thick.
  3. Heat coconut oil in a skillet over medium heat. Once hot, add the patties and cook for about 5-6 minutes on each side, or until they reach an internal temperature of 70°C.
  4. While the patties are cooking, prepare the cilantro chutney by blending cilantro leaves with lemon juice and a pinch of salt until smooth. Add water if needed to reach desired consistency.
  5. Once cooked, remove the patties from the skillet and let them rest for a couple of minutes.
  6. To assemble, place each patty in a large lettuce leaf, top with sliced tomato and cucumber, and drizzle with cilantro chutney. Wrap the lettuce around the filling and serve.
