Ingredients

  • Venison ground meat - 300 grams
  • Pork fat (or pork belly) - 100 grams, finely chopped
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Coconut oil - 2 tablespoons (for cooking)

Steps

  1. In a large mixing bowl, combine the ground venison and pork fat until well blended.
  2. Add garlic powder, onion powder, smoked paprika, cumin, black pepper, salt, and chopped parsley to the meat mixture.
  3. Mix everything thoroughly by hand or with a spoon until all spices are evenly distributed.
  4. Divide the mixture into 8 equal parts and shape each part into a sausage link, about 10 cm long.
  5. Heat coconut oil in a skillet over medium heat. Once hot, add the sausage links to the skillet.
  6. Cook the sausage links for about 10-12 minutes, turning occasionally until they are browned and cooked through.
  7. Remove from the skillet and let rest for a few minutes before serving.
