- Venison stew meat - 300 grams
- Carrots - 1 medium, diced
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Mushrooms - 100 grams, sliced
- Sweet potato - 1 medium, peeled and cubed
- Beef broth - 200 ml
- Coconut oil - 2 tablespoons
- Thyme - 1 teaspoon, dried
- Rosemary - 1 teaspoon, dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Almond flour - 100 grams
- Egg - 1 large (for egg wash)
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat coconut oil over medium heat. Add chopped onions and minced garlic, sautéing until onions are translucent.
- Add the diced carrots and sliced mushrooms to the skillet, cooking for an additional 5 minutes.
- Stir in the venison stew meat and brown on all sides, about 5-7 minutes.
- Add cubed sweet potato, beef broth, thyme, rosemary, salt, and black pepper. Bring to a simmer and cook for 20 minutes until sweet potatoes are tender.
- In a bowl, mix the almond flour with a pinch of salt. Gradually add water until a dough forms.
- Roll out the almond flour dough on a clean surface until it's about 1/4 inch thick. Cut into two circles large enough to cover your pie dish.
- Place the venison filling into a pie dish and cover with one of the dough circles. Seal the edges by pressing them together.
- Brush the top with beaten egg for a golden finish.
- Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown.
- Let it cool for 5 minutes before serving.
