- Smoked paprika - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cayenne pepper - 1/4 teaspoon (optional for heat)
- Sea salt - 1/2 teaspoon
Steps
- In a mixing bowl, combine tamari sauce, apple cider vinegar, honey, garlic powder, onion powder, smoked paprika, black pepper, cayenne pepper (if using), and sea salt to create a marinade.
- Add the thinly sliced venison meat to the marinade, ensuring all pieces are well-coated. Cover and refrigerate for at least 4 hours, or overnight for best flavor.
- After marinating, preheat your dehydrator to 70°C (160°F). If you don’t have a dehydrator, you can use an oven set to the lowest temperature.
- Arrange the marinated venison slices in a single layer on the dehydrator trays or a baking sheet lined with parchment paper.
- Dehydrate the meat for approximately 4-6 hours, checking for doneness. The jerky is ready when it is dry but still slightly pliable.
- Once done, remove the jerky from the dehydrator or oven and let it cool before storing it in an airtight container.
