Vegetable Uttapam

- Rice flour - 1 cup
- Urad dal flour - 1/4 cup
- Water - 1 1/2 cups
- Salt - 1/2 teaspoon
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, finely chopped
- Green bell pepper - 1/2, finely chopped
- Carrot - 1 medium, grated
- Coriander leaves - 2 tablespoons, chopped
- Green chilies - 1, finely chopped (optional)
- Oil - 2 tablespoons
Steps
- In a mixing bowl, combine rice flour, urad dal flour, and salt. Gradually add water to form a smooth batter. Let it rest for 15-20 minutes.
- After resting, stir the batter well. If it's too thick, add a little more water to achieve a pourable consistency.
- In a separate bowl, mix the chopped onion, tomato, green bell pepper, grated carrot, coriander leaves, and green chilies (if using).
- Heat a non-stick skillet or tawa over medium heat and add a teaspoon of oil, spreading it evenly.
- Pour a ladleful of batter onto the skillet and spread it out gently into a thick pancake shape.
- Evenly distribute the vegetable mixture on top of the batter and drizzle a little oil around the edges.
- Cook for 3-4 minutes on one side until the bottom is golden brown, then carefully flip it and cook for another 2-3 minutes on the other side.
- Repeat the process with the remaining batter and vegetables, adding oil as needed.
- Serve hot with coconut chutney or sambar.
