Ingredients

  • Rice flour - 1 cup
  • Urad dal flour - 1/4 cup
  • Water - 1 1/2 cups
  • Salt - 1/2 teaspoon
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, finely chopped
  • Green bell pepper - 1/2, finely chopped
  • Carrot - 1 medium, grated
  • Coriander leaves - 2 tablespoons, chopped
  • Green chilies - 1, finely chopped (optional)
  • Oil - 2 tablespoons

Steps

  1. In a mixing bowl, combine rice flour, urad dal flour, and salt. Gradually add water to form a smooth batter. Let it rest for 15-20 minutes.
  2. After resting, stir the batter well. If it's too thick, add a little more water to achieve a pourable consistency.
  3. In a separate bowl, mix the chopped onion, tomato, green bell pepper, grated carrot, coriander leaves, and green chilies (if using).
  4. Heat a non-stick skillet or tawa over medium heat and add a teaspoon of oil, spreading it evenly.
  5. Pour a ladleful of batter onto the skillet and spread it out gently into a thick pancake shape.
  6. Evenly distribute the vegetable mixture on top of the batter and drizzle a little oil around the edges.
  7. Cook for 3-4 minutes on one side until the bottom is golden brown, then carefully flip it and cook for another 2-3 minutes on the other side.
  8. Repeat the process with the remaining batter and vegetables, adding oil as needed.
  9. Serve hot with coconut chutney or sambar.
