- Garlic - 1 tablespoon, minced
- Coconut Milk - 200 ml
- Vegetable Oil - 2 tablespoons
- Tikka Masala Spice Mix - 2 tablespoons

Steps
- Heat vegetable oil in a large pan over medium heat. Add the chopped onion and sauté until golden brown.
- Stir in the grated ginger and minced garlic, and cook for another minute until fragrant.
- Add the diced bell pepper, carrot, and cauliflower to the pan. Sauté for about 5-7 minutes until the vegetables start to soften.
- Sprinkle in the Tikka Masala spice mix and stir well to coat the vegetables evenly.
- Pour in the pureed tomato and cook for 3-4 minutes, stirring occasionally.
- Add the coconut milk and green peas to the pan. Stir well and let it simmer for 10-12 minutes until the sauce thickens and the vegetables are cooked through.
