  • Bell Pepper (Red) - 100 grams, diced

  • Green Peas - 50 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 large, pureed
  • Ginger - 1 tablespoon, grated
  • Garlic - 1 tablespoon, minced
  • Coconut Milk - 200 ml
  • Vegetable Oil - 2 tablespoons
  • Tikka Masala Spice Mix - 2 tablespoons
  • Salt - to taste
  • Cilantro - for garnish
  • Lemon - 1, juiced

Steps

  1. Heat vegetable oil in a large pan over medium heat. Add the chopped onion and sauté until golden brown.
  2. Stir in the grated ginger and minced garlic, and cook for another minute until fragrant.
  3. Add the diced bell pepper, carrot, and cauliflower to the pan. Sauté for about 5-7 minutes until the vegetables start to soften.
  4. Sprinkle in the Tikka Masala spice mix and stir well to coat the vegetables evenly.
  5. Pour in the pureed tomato and cook for 3-4 minutes, stirring occasionally.
  6. Add the coconut milk and green peas to the pan. Stir well and let it simmer for 10-12 minutes until the sauce thickens and the vegetables are cooked through.
  7. Season with salt and lemon juice, adjusting to taste.
  8. Garnish with fresh cilantro before serving.
