Steps
- In a mixing bowl, combine Greek yogurt, garam masala, cumin powder, paprika, turmeric powder, ginger paste, garlic paste, lemon juice, and salt. Mix well to create a marinade.
- Add the diced bell peppers, zucchini, red onion, mushrooms, and cherry tomatoes to the marinade. Toss until all the vegetables are well coated.
- Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 15 minutes.
- Preheat your grill or oven to 200°C (392°F). If using skewers, soak them in water for 10 minutes to prevent burning.
- Thread the marinated vegetables onto skewers, alternating between different types for a colorful presentation.
- Brush the skewers with olive oil and place them on the grill or in the oven. Grill for about 10-15 minutes, turning occasionally, until the vegetables are tender and slightly charred.
- Remove from the grill and let them rest for a few minutes. Garnish with fresh coriander before serving.
