  • Garam masala - 1 teaspoon

  • Paprika - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Ginger paste - 1 teaspoon
  • Garlic paste - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Olive oil - 2 tablespoons
  • Fresh coriander - for garnish

Steps

  1. In a mixing bowl, combine Greek yogurt, garam masala, cumin powder, paprika, turmeric powder, ginger paste, garlic paste, lemon juice, and salt. Mix well to create a marinade.
  2. Add the diced bell peppers, zucchini, red onion, mushrooms, and cherry tomatoes to the marinade. Toss until all the vegetables are well coated.
  3. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 15 minutes.
  4. Preheat your grill or oven to 200°C (392°F). If using skewers, soak them in water for 10 minutes to prevent burning.
  5. Thread the marinated vegetables onto skewers, alternating between different types for a colorful presentation.
  6. Brush the skewers with olive oil and place them on the grill or in the oven. Grill for about 10-15 minutes, turning occasionally, until the vegetables are tender and slightly charred.
