Ingredients
- Carrot - 100 grams, grated
- Cabbage - 100 grams, finely chopped
- Green beans - 50 grams, chopped
- Onion - 1 medium, finely chopped
- Coconut - 50 grams, grated
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Green chili - 1, slit
- Curry leaves - 8-10 leaves
- Oil - 2 tablespoons
- Salt - to taste
Steps
- Heat the oil in a pan over medium heat and add the mustard seeds. Allow them to splutter.
- Add the cumin seeds, followed by the chopped onion, green chili, and curry leaves. Sauté until the onion turns translucent.
- Stir in the grated carrot and chopped green beans, cooking for about 3-4 minutes until they begin to soften.
- Add the finely chopped cabbage and turmeric powder. Mix well and cook for another 5-7 minutes, stirring occasionally.
- Once the vegetables are cooked but still crunchy, add the grated coconut and salt. Mix thoroughly and cook for an additional 2 minutes.
- Remove from heat and serve hot with rice or chapati.
