Ingredients

  • Carrot - 100 grams, grated
  • Cabbage - 100 grams, finely chopped
  • Green beans - 50 grams, chopped
  • Onion - 1 medium, finely chopped
  • Coconut - 50 grams, grated
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Green chili - 1, slit
  • Curry leaves - 8-10 leaves
  • Oil - 2 tablespoons
  • Salt - to taste

Steps

  1. Heat the oil in a pan over medium heat and add the mustard seeds. Allow them to splutter.
  2. Add the cumin seeds, followed by the chopped onion, green chili, and curry leaves. Sauté until the onion turns translucent.
  3. Stir in the grated carrot and chopped green beans, cooking for about 3-4 minutes until they begin to soften.
  4. Add the finely chopped cabbage and turmeric powder. Mix well and cook for another 5-7 minutes, stirring occasionally.
  5. Once the vegetables are cooked but still crunchy, add the grated coconut and salt. Mix thoroughly and cook for an additional 2 minutes.
  6. Remove from heat and serve hot with rice or chapati.
