- Whole wheat flour - 100 grams
- Jowar (sorghum) flour - 50 grams
- Besan (chickpea flour) - 25 grams
- Mixed vegetables (grated carrots, spinach, and cabbage) - 100 grams
- Onion (finely chopped) - 1 medium
- Green chili (finely chopped) - 1
- Coriander leaves (chopped) - 2 tablespoons
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Water - as needed
- Oil - for cooking
Steps
- In a mixing bowl, combine whole wheat flour, jowar flour, and besan.
- Add grated mixed vegetables, chopped onion, green chili, coriander leaves, cumin powder, turmeric powder, and salt to the flour mixture.
- Gradually add water and knead to form a smooth and pliable dough, cover with a damp cloth, and let it rest for 10 minutes.
- Divide the dough into equal portions and roll each portion into a ball.
- On a flat surface, flatten each ball into a round disc using your fingers or a rolling pin, about 1/4 inch thick.
- Heat a non-stick skillet or tava over medium heat and add a little oil.
- Cook the thalipeeth on the skillet for about 3-4 minutes on each side, until golden brown and cooked through, adding more oil as needed.
- Serve hot with yogurt or chutney.
