Ingredients

  • Whole wheat flour - 100 grams
  • Jowar (sorghum) flour - 50 grams
  • Besan (chickpea flour) - 25 grams
  • Mixed vegetables (grated carrots, spinach, and cabbage) - 100 grams
  • Onion (finely chopped) - 1 medium
  • Green chili (finely chopped) - 1
  • Coriander leaves (chopped) - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Water - as needed
  • Oil - for cooking

Steps

  1. In a mixing bowl, combine whole wheat flour, jowar flour, and besan.
  2. Add grated mixed vegetables, chopped onion, green chili, coriander leaves, cumin powder, turmeric powder, and salt to the flour mixture.
  3. Gradually add water and knead to form a smooth and pliable dough, cover with a damp cloth, and let it rest for 10 minutes.
  4. Divide the dough into equal portions and roll each portion into a ball.
  5. On a flat surface, flatten each ball into a round disc using your fingers or a rolling pin, about 1/4 inch thick.
  6. Heat a non-stick skillet or tava over medium heat and add a little oil.
  7. Cook the thalipeeth on the skillet for about 3-4 minutes on each side, until golden brown and cooked through, adding more oil as needed.
  8. Serve hot with yogurt or chutney.
