Ingredients

  • Cauliflower florets - 200 grams
  • Bell pepper (red or yellow) - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Green beans - 100 grams, trimmed
  • Olive oil - 2 tablespoons
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat the olive oil in a large skillet or wok over medium heat.
  2. Add the cumin seeds and let them splutter for a few seconds.
  3. Add the grated ginger and minced garlic, sauté for about 1 minute until fragrant.
  4. Add the cauliflower florets and stir-fry for 3-4 minutes until they begin to soften.
  5. Stir in the sliced bell pepper, zucchini, and green beans. Continue to stir-fry for another 5-7 minutes until all the vegetables are tender-crisp.
  6. Sprinkle turmeric powder, coriander powder, salt, and black pepper over the vegetables. Mix well to combine and cook for an additional 2 minutes.
  7. Remove from heat and garnish with fresh cilantro before serving.
