- Cauliflower florets - 200 grams
- Bell pepper (red or yellow) - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Green beans - 100 grams, trimmed
- Olive oil - 2 tablespoons
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Heat the olive oil in a large skillet or wok over medium heat.
- Add the cumin seeds and let them splutter for a few seconds.
- Add the grated ginger and minced garlic, sauté for about 1 minute until fragrant.
- Add the cauliflower florets and stir-fry for 3-4 minutes until they begin to soften.
- Stir in the sliced bell pepper, zucchini, and green beans. Continue to stir-fry for another 5-7 minutes until all the vegetables are tender-crisp.
- Sprinkle turmeric powder, coriander powder, salt, and black pepper over the vegetables. Mix well to combine and cook for an additional 2 minutes.
- Remove from heat and garnish with fresh cilantro before serving.
