- Ginger - 1 inch, grated
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Vegetable broth - 500 ml
- Salt - to taste
- Black pepper - to taste
- Fresh coriander leaves - for garnish
- Olive oil - 1 tablespoon
Steps
- Heat olive oil in a pot over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions, garlic, and ginger to the pot. Sauté until the onions become translucent.
- Stir in the diced carrots, potatoes, and green beans. Cook for 5 minutes, stirring occasionally.
- Add the diced bell pepper and chopped tomato. Stir well to combine.
- Sprinkle turmeric powder, coriander powder, and salt over the vegetables. Mix well to coat the veggies with the spices.
- Pour in the vegetable broth and bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes until the vegetables are tender.
- Stir in garam masala and adjust seasoning with black pepper and more salt if needed.
- Serve hot, garnished with fresh coriander leaves.
