  • Carrot - 100 grams, diced

  • Green beans - 50 grams, chopped
  • Bell pepper - 50 grams, diced
  • Tomato - 1 medium, chopped
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Vegetable broth - 500 ml
  • Salt - to taste
  • Black pepper - to taste
  • Fresh coriander leaves - for garnish
  • Olive oil - 1 tablespoon

Steps

  1. Heat olive oil in a pot over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions, garlic, and ginger to the pot. Sauté until the onions become translucent.
  3. Stir in the diced carrots, potatoes, and green beans. Cook for 5 minutes, stirring occasionally.
  4. Add the diced bell pepper and chopped tomato. Stir well to combine.
  5. Sprinkle turmeric powder, coriander powder, and salt over the vegetables. Mix well to coat the veggies with the spices.
  6. Pour in the vegetable broth and bring the mixture to a boil.
  7. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes until the vegetables are tender.
  8. Stir in garam masala and adjust seasoning with black pepper and more salt if needed.
  9. Serve hot, garnished with fresh coriander leaves.
