- Carrot - 1 medium, diced
- Potato - 1 medium, diced
- Green beans - 50 grams, chopped
- Tomato - 1 medium, chopped
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 inch, grated
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/4 teaspoon
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Fresh cilantro - a handful, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Heat olive oil in a pot over medium heat. Add cumin seeds and sauté until they begin to crackle.
- Add chopped onions, garlic, and ginger. Sauté until the onions are translucent.
- Stir in diced carrots, potatoes, and green beans. Cook for about 5 minutes, stirring occasionally.
- Add chopped tomatoes, coriander powder, turmeric powder, and red chili powder. Cook for another 2-3 minutes until the tomatoes soften.
- Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for 15-20 minutes until the vegetables are tender.
- Season with salt and black pepper to taste. Stir in lemon juice and chopped cilantro.
- Serve hot, garnished with additional cilantro if desired.
