Ingredients

  • Carrot - 1 medium, diced

  • Green beans - 50 grams, chopped
  • Tomato - 1 medium, chopped
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/4 teaspoon
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Fresh cilantro - a handful, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Heat olive oil in a pot over medium heat. Add cumin seeds and sauté until they begin to crackle.
  2. Add chopped onions, garlic, and ginger. Sauté until the onions are translucent.
  3. Stir in diced carrots, potatoes, and green beans. Cook for about 5 minutes, stirring occasionally.
  4. Add chopped tomatoes, coriander powder, turmeric powder, and red chili powder. Cook for another 2-3 minutes until the tomatoes soften.
  5. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for 15-20 minutes until the vegetables are tender.
  6. Season with salt and black pepper to taste. Stir in lemon juice and chopped cilantro.
  7. Serve hot, garnished with additional cilantro if desired.
