Vegetable Shami Kebab

Ingredients
- Chana dal (split chickpeas) - 100 grams
- Potato - 1 medium (about 150 grams)
- Spinach leaves - 50 grams
- Onion - 1 small, finely chopped (about 50 grams)
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Green chili - 1, finely chopped
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Black pepper - 1/4 teaspoon
- Fresh coriander leaves - 2 tablespoons, chopped
- Bread crumbs - 2 tablespoons
- Oil - for shallow frying
Steps
- Soak the chana dal in water for 2-3 hours, then drain.
- In a pot, boil the soaked chana dal with enough water until soft, about 15-20 minutes. Drain and set aside.
- In the same pot, add the potato, cover with water, and boil until tender, about 10 minutes. Drain and let cool.
- In a frying pan, heat a teaspoon of oil and sauté the chopped onion until golden brown. Add the ginger, garlic, and green chili, and cook for another 2 minutes.
- Add the spinach to the pan and cook until wilted. Remove from heat and allow to cool slightly.
- In a mixing bowl, mash the boiled potato and chana dal together. Add the sautéed mixture, cumin powder, coriander powder, garam masala, salt, black pepper, and chopped coriander leaves. Mix well until combined.
- Form the mixture into small patties or kebabs, about 1 cm thick.
- Coat each kebab with bread crumbs for extra crunch.
- Heat oil in a frying pan over medium heat. Shallow fry the kebabs until golden brown on both sides, about 4-5 minutes per side.
- Serve hot with mint chutney or yogurt dip.
