Ingredients

  • Zucchini - 100 grams, grated
  • Carrot - 100 grams, grated
  • Bell pepper - 50 grams, finely chopped
  • Onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1-inch piece, grated
  • Chickpea flour (besan) - 50 grams
  • Rice flour - 30 grams
  • Cilantro - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - 1 teaspoon (to taste)
  • Lemon juice - 1 tablespoon
  • Olive oil - 1 tablespoon (for brushing)
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. In a large mixing bowl, combine the grated zucchini, carrot, chopped bell pepper, onion, minced garlic, and grated ginger.
  2. Add the chickpea flour, rice flour, chopped cilantro, cumin powder, coriander powder, garam masala, red chili powder, salt, and lemon juice to the vegetable mixture.
  3. Mix well until all ingredients are combined and form a dough-like consistency. If the mixture is too wet, add a little more chickpea flour.
  4. Divide the mixture into four equal portions and shape each portion around a skewer, pressing firmly to form a kebab shape.
  5. Preheat your grill or BBQ to medium-high heat. Brush the kebabs lightly with olive oil.
  6. Place the skewers on the grill and cook for about 15-20 minutes, turning occasionally until they are golden brown and cooked through.
  7. Remove from the grill, let them cool for a minute, and serve hot with mint chutney or your favorite dipping sauce.
