- Zucchini - 100 grams, grated
- Carrot - 100 grams, grated
- Bell pepper - 50 grams, finely chopped

- Garlic - 2 cloves, minced
- Ginger - 1-inch piece, grated
- Chickpea flour (besan) - 50 grams
- Rice flour - 30 grams
- Cilantro - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - 1 teaspoon (to taste)
- Lemon juice - 1 tablespoon
- Olive oil - 1 tablespoon (for brushing)
- Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)
Steps
- In a large mixing bowl, combine the grated zucchini, carrot, chopped bell pepper, onion, minced garlic, and grated ginger.
- Add the chickpea flour, rice flour, chopped cilantro, cumin powder, coriander powder, garam masala, red chili powder, salt, and lemon juice to the vegetable mixture.
- Mix well until all ingredients are combined and form a dough-like consistency. If the mixture is too wet, add a little more chickpea flour.
- Divide the mixture into four equal portions and shape each portion around a skewer, pressing firmly to form a kebab shape.
- Preheat your grill or BBQ to medium-high heat. Brush the kebabs lightly with olive oil.
- Place the skewers on the grill and cook for about 15-20 minutes, turning occasionally until they are golden brown and cooked through.
- Remove from the grill, let them cool for a minute, and serve hot with mint chutney or your favorite dipping sauce.
