Ingredients

  • Grated carrot - 50 grams
  • Finely chopped bell pepper - 50 grams
  • Chopped spinach - 50 grams
  • Boiled and mashed potatoes - 100 grams
  • Chopped onion - 50 grams
  • Minced garlic - 1 teaspoon
  • Minced ginger - 1 teaspoon
  • Chopped green chilies - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Fresh coriander leaves, chopped - 2 tablespoons
  • Breadcrumbs - 50 grams
  • Oil for brushing - 2 tablespoons
  • Skewers - 4 pieces

Steps

  1. In a large mixing bowl, combine the grated carrot, chopped bell pepper, chopped spinach, boiled and mashed potatoes, chopped onion, minced garlic, minced ginger, chopped green chilies, garam masala, cumin powder, coriander powder, and salt.
  2. Mix the ingredients thoroughly until well combined, then add the chopped coriander leaves and breadcrumbs. Mix again to form a dough-like consistency that can hold its shape.
  3. Divide the mixture into 4 equal portions and shape each portion around a skewer to form long kebabs, pressing firmly to ensure they stick to the skewer.
  4. Preheat a grill or a non-stick pan over medium heat. Lightly brush the kebabs with oil on all sides.
  5. Place the skewers on the grill or pan and cook for about 8-10 minutes, turning occasionally, until the kebabs are golden brown and cooked through.
  6. Remove from the grill and let them cool slightly before serving. Serve hot with mint chutney and naan.
